Avgelemano (Lemon Chicken Noodle Soup)
Ingredients:
- 2 c - chicken (whaveter cut you want)
- 6 c - broth/stock (chicken)
- 2 - carrots (split)
- 1 - leek (split)
- the leek and carrot will be removed, so don't cut too small
- ½ c - fresh squeezed lemon juice
- 2 - bay leaves
- 2 - eggs
- 1 - onion (diced)
- 1½ c - orzo
Steps:
- Sauté onion in olive oil until softened
- Add chicken & broth
- Add bay leaves, carrots, and leak. Simmer for 1 hour.
- Add orzo, cook to box instructions minus 3 minutes.
- Whisk eggs in bowl. Slowly add some of the broth to the bowl so as to not scramble the eggs. Add mixture to pot.
- Add lemon juice (and zest is best)
- Salt & pepper to taste
Alternate Method:
Simmer the chicken in water and then sauté the onion & add to pot. Also add carrots, leek, bay leaves & simmer another hour. Follow remaining steps above.
