Ingredients:
- 2 Lb chuck roast
- 1 tbs oil
- 1 cup onion (yellow) diced
- 3 cloves minced garlic
- 1 tbs cumin
- 1 tbs oregano
- 1/2 cup beef broth
- 2-4 chiles in adobo sauce, minced
- 1/4 cup lime juice
- 2 tbs apple cider vinegar
- 2 tsp salt
- 1 tsp pepper
- 1/4 tsp ground cloves
- 3 bay leaves
Steps:
- Quarter roast and seer in instant pot (saute) on all sides in the oil
- Saute onion until translucent.
- Add garlic, cumin, and oregano. Cook 1 minute
- Add broth, chiles, lime juice, vinegar, salt, pepper, cloves, and bay leaves. Stir to combine and then add in the meat.
- Cook on high pressure for 60 minutes.
- Allow to depressurize naturally, shred beef, and mix back in with juice.
