Barbacoa Beef

Ingredients:

  • 2 Lb chuck roast
  • 1 tbs oil
  • 1 cup onion (yellow) diced
  • 3 cloves minced garlic
  • 1 tbs cumin
  • 1 tbs oregano
  • 1/2 cup beef broth
  • 2-4 chiles in adobo sauce, minced
  • 1/4 cup lime juice
  • 2 tbs apple cider vinegar
  • 2 tsp salt
  • 1 tsp pepper
  • 1/4 tsp ground cloves
  • 3 bay leaves

Steps:

  1. Quarter roast and seer in instant pot (saute) on all sides in the oil
  2. Saute onion until translucent.
  3. Add garlic, cumin, and oregano. Cook 1 minute
  4. Add broth, chiles, lime juice, vinegar, salt, pepper, cloves, and bay leaves. Stir to combine and then add in the meat.
  5. Cook on high pressure for 60 minutes.
  6. Allow to depressurize naturally, shred beef, and mix back in with juice.
