Ingredients:
- 1/2 cup unsalted butter
- 4 oz cream cheese (softened)
- 1 cup sugar
- 1 egg
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1/2 tsp baking powder
- 1 3/4 cup cake flour
- Can substitute 3/4 all purpose flour and add 2 tbs corn flour. Mix well!
Steps:
- Cream together butter and cream cheese
- Add sugar and beat for 1 minute
- Add egg and combine
- Add extracts and combine
- Add baking powder and flour (dry ingredients) in three amounts
- Refrigerate for at least 1 hour
- Using floured hands, roll out 1" balls then gently flatten using bottom of glass (not too flat)
- Bake 9-11 minutes, cookies are done when the edges turn golden
